Asa-fumi-jikomi (朝踏仕込) — “morning-tread preparation”: the dough is carefully trodden in the hours before we open, rested briefly, and cut the same day.

Fried to order — blazing hot, shatteringly crisp.

Sanuki classics: kashiwa-ten of fine chicken, soft-boiled egg tempura with a molten yolk, kakiage laced with small shrimp — and the mighty “tokujo” tempura platter.

Seasonal vegetables too, plus jako-ten, the famed fried fish cake of Uwajima in Ehime, and hira-ten, Sanuki’s own.

Hot tempura, a well-chilled beer — and to finish, smooth udon that slips right down.
